This webinar aims to create an international platform for communication across continents and disciplines, bringing together scientists from various areas of research in the field of food quality and safety to exchange and share information in support of human health and well-being. Food Quality 2021 is comprised to offer comprehensive sessions that address current issues in the field of food safety, i.e. Food Safety in Covid-19 outbreak, Food quality in the framework of a sustainable food production, Preventive Food Safety Systems, Artificial Intelligence and Food Safety, Sanitation and Quality Standards.

Session 1: Preventive Food Safety Systems
This section contains resources for preventive food safety systems such as Hazard Analysis Critical Control Point (HACCP) and the necessity to establish a process in order to prevent foodborne illness.HACCP is described as "a food safety program developed for astronauts whichfocuses on preventing hazards that could cause food-borne illnesses by applying science-based controls, from raw material to finished products. Traditionally, industry and regulators have depended on spot-checks of manufacturing conditions and random sampling of final products to ensure safe food.

Session 2: Food Safety in Covid-19 Outbreak
Food safety is part of the comprehensive COVID-19 response carrying out alongside to stop the pandemic from disrupting food systems, essential to food security, health, livelihoods and local economies. While COVID-19 has not been transmitted by food, the pandemic has sharpened the focus on food safety-related issues, such as antimicrobial resistance, zoonotic diseases, climate change, food fraud and the digitalization of food systems.Concerted efforts on food safety will help countries mitigate the socio-economic impacts of the pandemic and boost their resilience for the long term by facilitating and accelerating food and agricultural trade, preventing the next zoonotic pandemic and transforming food systems.

Session 3: Artificial Intelligence and Food Safety
Artificial Intelligence Advances Food Safety is helping food producers overcome not only the limitations of their human workforce but of traditional machine vision as well, using machine learning to better evaluate issues around food safety. AI has been successfully deployed for applications such as sorting fresh produce, managing supply chain, food safety compliance monitoring, effective cleaning in place systems, anticipating consumer preference and new product development with greater efficiency and savings on time and resources.

Session 4: Food quality in the framework of a sustainable food production
The food system wheel framework includes poverty reduction, food security and nutrition which inturn take place in the structure of the system and which consists of a core system, societal elements and natural elements. It includes improving efficiency in the use of resources, conserving, pro- tecting and enhancing natural ecosystems, protecting and improving rural liveli- hoods and social well-being.

Session 5:  Food Sanitation and Quality Standards
Use for resources on guidelines, control methods, good practices, and risk reduction strategies are used to enhance the microbiological quality of food and to enhance the overall safety of the food supply. General ecological factors and influences, such as chemicals, pesticides, food hygiene, ethical trading and production methods, are among the components of a “quality standard”.

In many countries, including some of the more populous ones, the relative prevalence of undernourishment will decline significantly with this approach. Fewer countries than at present will have high levels of undernourishment, none of them in the most populous class. The problem of undernourishment will tend to become lesser in terms of both absolute numbers affected and, even more, in relative terms, hence it will become more tractable through policy interventions, both national and international. Now that you have all the information you need on eating healthy, the most important action step you can do is to maintain this lifestyle choice as much as possible.
